dried pinto beans
1 onion, chopped
1. Rinse 3 c dried pinto beans and place in crock pot. Add the chopped onion and several minced garlic cloves to taste.
2. Add 8 c water and cook on low all day. When the beans are tender and done, add salt to taste.
Great in burritos as they are, or mash them up for more of a refried bean feel. Serve with corn bread for a simple yet satisfying meal and tomorrow night, make a taco salad with the leftovers.
